The salsa was by request of my boss, Jennifer - after she tasted the last batch. I don't generally measure stuff unless I'm using someone else's recipe for something. Following are approximate quantities for the evening's creations.
Salsa
(made a LARGE bowl)
- Balsamic Vinegar about 3/4 cup
- Garlic 5 or 6 cloves, finely chopped
- Large White Onion finely chopped
- 2 Large Yellow "low acid" tomatoes, chopped
- Large handful Cilantro
- 3 "on the vine" Tomatoes, chopped in small pieces
- 4 Roma Tomatoes, chopped
- 2 Large Beefsteak Tomatoes, chopped
Lasagna
(made a 9x12 pan)
- Large container of Ricotta
- Package of Feta
- Chopped Basil
- Chopped Garlic
- One package of burger crumbles
- Chopped Basil
- 1/2 cup water
Boil about 15 lasagna noodles, drain and rinse under cold water.
Spread about 3/4 cup of your choice of Sauce in the bottom of the pan, place one layer of noodles over sauce. Spread a level of ricotta mixture, then noodles, then burger mixture, then noodles, then sauce, then ricotta, etc. until pan is full. Top with sauce, cover with tin foil and bake at 350 for 20 minutes. Remove tin foil, top with shredded mozzarella and return to oven for about a half hour or until cheese browns and bubbles.
It's now 12:45am and I'm going to try the lasagna.

I know... I went to bed about 1:30am and just got up now (11am) that's a good 9+ hours. :)
